I think as long as you don't unfreeze and then re-freeze the whole container/bag each time it should be fine. If you don't boil or microwave the fruit and veggies then you shouldn't lose much of the nutrional value.

My 2 gliders don't seemed to be real thrilled w/apples once I freeze them, but they are fine w/papaya and veggies that have been frozen.
