I also have a female SG about 1 1/2 yrs. I like to say that Lucy has an ATTITUDE. Like yours she will not let me hold her. Yes, I can pet her inside the cage and she will take food from my hand. All this took approximately 1 yr. to accomplish. Actually, until she had her first joey, I didn't think we would ever make any progress. That's not to say that you have to let yours breed to progress with bonding.
I haven't given up on Lucy, but I have had to accept the fact that she is not going to bond like my other three. We would all like to have the cuddly ones that just love all over you, but gliders like people have very different temperments.
I know this doesn't sound very encouraging, but just keep doing what you're doing and she just might surprise you.
