Have you already tried to make feeding a little bit more interesting for your gliders?
You could hang some grapes high into the cage, where they can only reach them with little jumps or especially acrobatic climbing. Also, if your gliders like any kind of melon, why always cut it into tiny peaces? Cut out a small corner, where they can begin and then give them the whole thing! (Of course, you won´t do that every evening as most of the fruit will get wasted unless you have about twelve gliders in one cage). Mine just love that. Hide their food somewhere in the cage or find other ways to let them "work" for it. I found that all my six gliders (even the small joeys) got much more curious, lively and courageous since I let them "earn" their food. The only thing I just present in a standard bowl is the leadbeaters.
If it is possible for you to let them hunt their insects, don´t take that fun away from them. After all, hunting and looking for food are the only games they play in the wild. Every other game (chasing cat toys etc..) is just compensation.
Just a few suggestions.
