It has been my experience that Sugar Gliders do not learn very well by negative punishment - you may only succeed in frightening her and/or angering her. Not really good for the relationship. She'll figure it out soon enough that it's you fireing that water at her. When I've gotten a "chewy" glider, I don't try to change them, I limit their daily free time to a room where the chewing won't interfere with their play time. For example, the majority of my gliders are not chewers and get to come out and play in my bedroom while I watch t.v. I have a couple chewers, and they have playtime in the bathroom where it's not a concern - they all seem happy, the bathroom has lots of playtoys too. I think that sounds easier than spreading yucky stuff all over the room, or not letting them come out as often - and much better than firing a water pistol at them. Let us know how you make out.
