How many times a day do they need to be feed? Once a night? That's what I read but I want to check to see if it's right because it sounds odd.

They are generally fed once at night with dry snacks left in the cage for daytime. Distilled water should also always be available. BTW, why is it that you posted as "nobody".

I haven't been leaving dry snacks for mine, but if I'm unhappy with how much leadbeater's is left in the morning, I have left that in there sometimes. I don't think it would go bad that quickly. Since cat food is a no no, what dry snacks besides cereal (which has questionable nutritional value)?

I use a couple of different Mazuri Zoo Feeds as dry snacks. Very nutritional.
