I can say that it seems like things are going well for you. It's a good idea to start handling the little guy. I don't think it's likely that you will be able to "pick him up" it's easier to start by placing your hand in with him as he sleeps, which your already doing so all in all it sounds like you are getting along well.

Now for your questions:
Sleeping habits can and do change, try to wake him earlier each day.
About the cage cleaning, do you have a pouch for him? If not make one or get one, I used a sleeve from sweatshirt cut it to a length about 5" long and tied the small end with a wire tie. You can also buy one from a pet store or the Internet. Then once you have them in their pouch asleep you can do anything you want, including cleaning their cage.
Sneezing is cute but everyone has a different opinion on what it is. I think it's a way of showing dominance, but I could be wrong.
Sounds to me like you will soon be bonded
