Give her time.. She is probabley just conditioned by the breeder from being a baby to being held that way. She needs more time to trust you and to trust herself with you.
It is interesting that she crabs when you just put your hand out.. But you are doing fine.. Atleast she doesn't bite.. Most people have problems with that when trying to bond.. Please try the treat bit without grabbing her to pick her up. I think she will start to come around..
