Chop the spinach. Cook celery in a tablespoon of water about three minutes, till crisp-tender. Remove from heat and drain if necessary. Beat egg; stir in celery, tomato and spinach. Cook in microwave about 60-90 seconds, stirring every thirty seconds. Cool and serve. Enough for three gliders. **The amount of tomato given is one tablespoon. You can use yellow or red tomatoes. The spinach will release water as it cooks, and you may need to cook the omelet a little longer. Don't overcook it or the egg will get tough.
